As someone who has incredibly fond memories of Paris, especially all of the amazing food eaten in dark, cozy, candlelit restaurants filled with the loud hum of laughter and people speaking in french, walking into Le Diplomate on dark rainy evenings, feels just right. It was the most perfect summer day complete with picking pounds and pounds of blackberries off the vine, fresh peaches, peach soft serve and clear sunny skies. Other than eating almost as many blackberries as we picked, which is really saying something as it was literally a basket full, the next best part of the day was the discovery of the most delicious fruity muffin recipe. One of my favorite things about moving back to Charlottesville, is being constantly excited and surprised by all the new delicious restaurants that pop up around town. Get ready for a salad that cures the ” oh no, not another boring salad” sentiment and really steps up your office lunch game! The chicken is crusted with unsweetened coconut and baked- so it’s nice and crispy without the grease & fat from frying and topped with a delicious peanut asian dressing.
