Lemon Dijon Chicken
This is an easy refreshing chicken dish that is Whole 30 approved and packs a punch of flavor! Great for those “I don’t know what to make” nights and utilizes lots of simple ingredients from the fridge or pantry!

Chicken
  1. Slice the 2 chicken breasts length wise in half to make thinner and then cut into two pieces so would cook more quickly.
  2. Season chicken with salt, pepper and paprika.
  3. Cook in extra virgin olive oil over medium high heat until browned on both sides (about 5 mins). Put aside on a plate.
Sauce
  1. In same pan that was used to cook chicken – sautee garlic and onion in remaining olive oil (add more as needed)
  2. Once sautéed down- add 1 ½ -2 cups of vegetable broth (amount up to you- I like my things saucy)
  3. Add juice of 1 lemon
  4. Add 1-2 tbls of Dijon mustard (trader joes is the best cause it’s kinda spicy)
  5. Whisk together over low/med heat and add Italian seasoning, salt and pepper.
  6. Once a low simmer add cooked chicken back in and scoop sauce over breasts- keep simmering on low heat for 3-5 minutes.
  7. Add some artichokes to sautee briefly and top off with fresh herbs. I suggest fresh dill and basil.
